It’s time to fire up that grill – July 4th is almost upon us! The summer holiday is a feast that we all look forward to – from freshly grilled burgers to warm seasonal salads and everything in between. We’ve rounded up some of the best dishes and cocktails that your celebration can’t do without.

Country Living’s Zucchini and Pecorino Fritters
Makes 4 servings

2 medium zucchini
1 large egg
2 oz. Pecorino, grated
1/2 c. panko
1 clove garlic, pressed
Black pepper

Preheat oven to 400°F.

Grate zucchini; squeeze dry with paper towels and transfer to a bowl. Add egg, Pecorino, panko, garlic, and pepper; stir to combine.

Drop heaping tablespoonfuls of mixture onto a greased baking sheet and gently flatten.

Bake, flipping halfway through, until golden brown and crisp, 18 to 20 minutes.

Delish’ Strawberry Balsamic Pasta Salad
Makes 8 servings

1 lb. farfalle
1/4 c. balsamic vinegar
1/2 c. Feta, crumbled
2 c. strawberries, quartered
1/2 c. baby spinach
kosher salt
Freshly ground black pepper
1/4 c. almond slivers, toasted, for garnish

In a large pot of salted boiling water, cook farfalle according to package directions until al dente. Drain, then transfer to a large serving bowl.

Make balsamic glaze: In a small saucepan, bring balsamic vinegar to a boil. Reduce heat and simmer until thickened, about 10 minutes.

To bowl, add feta, strawberries and spinach. Season generously with salt and pepper and toss to combine.

Drizzle with balsamic glaze and garnish with almonds.

Teriyaki Burgers
Makes 4 servings

1/3 c. teriyaki sauce
Juice and zest of 1 lime
1 tbsp. sriracha
4 hamburger patties
kosher salt
Freshly ground black pepper
4 pineapple rings
4 Hamburger buns

In a large baking dish, combine teriyaki sauce, lime juice and zest, and Sriracha. Add burger patties and toss until coated. Let sit for 20 minutes.
Heat grill or grill pan to high. Season burger patties with salt and pepper and grill until pink, 6 minutes per side for medium. Add pineapples and grill until charred, 1 minute per side.

Assemble burger: Top bottom buns with a patty and pineapple rings, then add top buns and serve.

Country Living’s Raspberry and Lemon Rosé Sparkler
Makes 6 servings

1 1/2 pt. fresh raspberries
2 tbsp. sugar
2 tbsp. fresh lemon juice
1 bottle sparkling rosé, chilled
Sliced lemons and raspberries, for serving

Smash raspberries with sugar and lemon juice in a pitcher. Top with sparkling rosé. Serve over ice with sliced lemons and raspberries.

Spicy Grapefruit Sidecar
Makes 1 serving

Grapefruit wedge, for rimming
2 tsp. granulated sugar
2 tsp. chili powder
Ice
2 oz. cognac
2 oz. grapefruit juice
1 oz. Cointreau
Grapefruit slice, for garnish

Rim glass with a grapefruit wedge. Combine sugar and chili powder on a small plate and dip rim into mixture, turning to coat.

Fill a cocktail shaker with ice and add cognac, Cointreau, and grapefruit juice. Shake until chilled.

Strain into rimmed glass and garnish with a grapefruit slice.

Cherry Bomb Mimosas
Makes 4 servings

1 c. pineapple juice
1/4 c. maraschino cherry juice (from the jar of cherries)
1 bottle champagne
Orange slices, for garnish

In champagne flutes, combine pineapple juice and maraschino cherry juice. Top off with champagne and garnish with an orange slice.
